I need a hamburger.....
But not just any hamburger..... I want the best gawd damn hamburger in the world and I want the best damn fixings to go on it.....
If any here know me then they know how seriously I take cooking and tasty food.....
So have at it one and all..... Construct the perfect hamburger.....

One of the best hamburgers I have ever eaten consisted of guacamole, onion rings, bacon, chedder, lettuce, tomato, onions, and the burger. I also think a burger with a sun dried tomato pesto, feta, lettuce, tomato, onions, and provolone would be good. I'm also interested in adding hummus to a burger. But the guacamole burger is definately good. Surprisingly I had it at a hard rock cafe in Atlanta. I didn't think I would find the best burger there.

Kevy is from the south..... Cant get much better than that.....

Ground chuck with worstershire sauce mixed in. fied slowly over a nest of diced onions add garlic, salt and pepper as you like. Dill pickle sliced thing longways, tomoto, lettice, and plain yellow mustard. Just a plain everyday hamburger, no bells or whistles. No covering up the flavor with strange stuff. ;-D ;-D ;-D

Simple is good...... but i kind of think that worcesterchestershostkershire sauce is a bit over used.....
How about ground chuck with Tony Chachers spice and adobo powder to taste, grilled along side a portabello mushroom cap sprinkled with a bit of sea salt and drizzled with truffel oil.... Served on a fresh baked bulkie roll with good dijon mustard, a slice of onion, black tomato and bib lettuce and topped with a home made mayonaise freshly cracked pepper.

You can call it Worcester (pronounced simply "wooster") sauce if you like. That's what we call it on this side of the pond.
I think it's delicious, but actually I (in my complete cookery ignorance) only know how to use it for two things:
- with cheese on toast
- with tomato juice or a bloody mary
Are there any other dishes that are immeasurably enhanced by it?
What is ground chuck, by the way? Mince? Over here "chuck" is a northern term used as a mildly affectionate way of addressing someone. But it doesn't quite seem to fit your usage, Brian!

Worcesterchestershastamasta sauce is used on all sorts of meats and in stews, soups and casseroles.....
I like it on a nice thick steak....... Yummy.....
But I agree.... it does make a killer Bloody Mary

How about changing the ground chuck to ground sirloin ? Tony Chachere's spice and adobe powder sound good though. And you can't beat mushrooms, but I must ask, black tomato ? And what would bib lettuce be similar to ?

That picture amuses me; it brings to mind the cow from The Restaurant at the End of the Universe (Douglas Adams) which stands there patiently while the diners decide which parts of it to eat, then nips off to shoot itself humanely when they've chosen. Maybe it's just me.
I'll have to try Worcester Sauce with a steak next time I have one.

Black tomato.... There is a farmer i know that specializes in heirloom vegies....... They are just the yummiest..... and taste nothing like the nasty things they sell at the supermarkets......
Bib lettuce is a variety of leaf lettuce..... smallish leaves grown and harvested individually.

about 1lb each of good lean chuck steak and belly of pork. One clove of garlic, one onion, one egg. Pinch of ground nutmeg, salt and pepper to taste. Note that the pork means this burger may not be rare.
Mince (grind) the meat and the onion. On a board slice the garlic and "gruind" using salt and a round bladed knife. Add to the meat in the bowl, and add the other seasonings. Mix well
Make into thin patties (you have to ensure it is cooked because of the pork) and fry (yes FRY!) in shallow lard (Lard adds flavour)
Serve either alone with veg of choice (rice and peas work well), or place in buns with homemade tomatao ketchup (tomato puree, water to thin a little, maple syrup, salt and a splash of vinegar, mixed to taste the way you want it.
I like to accompany it with dill pickles, and pickled green chilis or pickled banana wax peppers
For those who ask "Why the pork?" it lifts the heaviness of pure beef and the fat provides flavour and texture.
Those who like meatloaf can use the same basic mix as a meatloaf. It also works well as meatballs cooked in a lighter tomato sauce in a large saucepan

Greetings Marc-
I realise its late, and I'm sure you've eaten by now, but you asked for the best, AND THIS IS IT!
In a bowl combine a third of a cup of quick oats with beaten egg and a quarter cup of homemade Barbecue Sauce. (we can start a new thread on the best of the sauces) add a quarter teaspoon of onion salt, garlic salt and black pepper. Add another eighth of a teaspoon of salt and a pound and a half of good ground beef. Make six burgers and light the barbee! Baste with more of your sauce and enjoy!

Throw a bit of those hot bannana peppers on it (the yellow green kind that are not so hot they eat out your whole mouth) and you have something I could really like. I grew up wanting only the hamburger, bun, salt and pepper, and maybe some onion on it. I spent all that time in California hating it every time they would put ketchup or mustard on it and wiping it all off. Finally gave up on it and came to not object to it, but I never like ketchup as a kid. And you guys think you are weird huh?
