Marc bought a new cookbook today and this was in it.

Cock-A-Leekie Soup

1 three pound chicken
2 1/2 qts water

Bouquet Garni in cheese cloth
2 sprigs parsley
1 bay leaf
1/4 teaspoon thyme leaves

2 teaspoons salt
1 Tablespoon chopped parsley
1/4 cup pearl barley
7 leeks, sliced
2 stalks celery, chopped

Place chicken in a large saucepan with water and bouquet garni. Bring to a boil over high heat and skim off the scum that rises to the surface. Add leeks, celery, barley, and salt. Reduce heat to low and simmer for 2 hours.
Transfer chicken to cutting board. Remove meat from carcass and discard the skin and bones. Slice meat and return to broth. Simmer soup over moderate heat for 5 minutes. Sprinkle with parsley before serving.
